Food Hygiene and Sanitation Updates for Key GFSI-Benchmarked Schemes

For close to two decades, the Global Food Safety Initiative Benchmarking Requirements have been the basis for developing, implementing, and reviewing HACCP-based food safety and management systems. These are used by food businesses globally to ensure the delivery of safe and legally compliant products to their customers.

Wide-scale adoption of GFSI-benchmarking requirements within food safety schemes, including those operated by BRCGS FSSC22000, SQF, and IFS, has subsequently led to an increased focus on key aspects of food hygiene including, 

  • cross-contamination prevention, 
  • hygienic design requirements for facilities, food equipment, tools, and utensils, and, 
  • Food safety, hygiene, and sanitation culture within a food facility.

Despite this, non-conformances related to equipment and facility hygiene still rank highly in GFSI scheme audit findings. In the first 10 months of auditing against BRCGS Issue 9, four of the top five non-conformances were related to these issues.
This webinar will:

  • Emphasise the significance of sanitation as a preventive control in HACCP-based systems to help prevent foodborne illnesses.
  • Provide summaries of the key food hygiene and sanitation requirements found in the latest versions of the schemes operated by BRCGS, SQF, FSSC 22000, and IFS, and of the associated and most frequently observed audit non-conformances.
  • Include insights related to surface decontamination strategies, hygienic design, zoning, environmental monitoring, cross-contamination control, and food safety culture of relevance to the food and beverage sector.

Deb Smith

Global Hygiene Specialist, Vikan

Deb Smith has 40 years of food safety/research experience. At Vikan, she provides expert hygiene advice and support to both colleagues and the food industry. Prior to joining Vikan, Deb worked as a microbiologist for a large poultry processor; as a Research Manager in the UK Governments Food Safety Division; and as Food Hygiene Research Manager at Campden BRI. She holds qualifications in Applied Microbiology, Nutrition & Food Science, Advanced Food Hygiene and HACCP, and as an FSSC22000 lead auditor. Deb has authored numerous food safety/hygiene publications, including peer-reviewed papers, book chapters, and several food industry hygiene guidelines. She also regularly presents her work at national and international food safety events, sits on the Advisory Board of EHEDG and, in 2023, was honored with the IAFP Sanitarian of the Year award.

Amit M. Kheradia

Environmental Health and Sanitation Manager, REHS/RS - Remco

Amit M. Kheradia has 19 years of experience in food safety/quality and processing and is part of the Vikan Hygiene Team that presents webinars, white papers, and articles on food safety topics. He holds qualifications in Food Safety and Quality Assurance from the University of Guelph, Canada (MSc) and Food Science and Technology from University of Nairobi, Kenya (BSc).

He is certified in HACCP and FSSC 22000 internal auditing and is a Registered Environmental Health Specialist/Registered Sanitarian. He is also an FSCPA Preventive Controls Qualified Individual and is conversant with Canadian food safety regulations. At Remco, Amit helps provide timely and expert knowledge, support, and training on food safety and quality to the Remco team, customers, and end-users.
